    I happened to be browsing before my bedtime & your story caught my eye! And got more interesting to me, when you guys were thinking about moving to PI & preferably, Clark Pampanga.     That is a taro leaves cooked in coconut milk with chilli and pork, or maybe dried fish, sometimes shirmps!. It's addictive, if you do make yourself used to eating it!😋😋😋

    These are 'modern' ensaymada that are cakey brioche/tangzhong style bread. The ensaimada I grew up with in 1980s Metro Manila bakeries were closer to the Spanish Mallorcan bread. Soft, lard shortening brushed with oil and butter and dusted with sugar (icing sugar in the Spanish version). Grated cheese on top was 'espesyal'. I still saw this old fashioned ensaimada labelled 'Classic' in 2019. This classic version, warm at around 7am or 4pm, with quesong puti/Quesillo (fresh cheese, queso Blanco or queso fresco), fresh hot chocolate or barako coffee... Crazy as it sounds, float the cheese in the hot chocolate, tear a piece of the ensaimada, dip the bread in the hot chocolate and try catch a morsel of the cheese... Memories. I think some Latin Americans also put cheese in the hot chocolate...

I've been watching your videos and I'm originally from California as well and have filipino husband lol and 4 kids that are currently under 5 years old We are planning to move there sometime in 2026. Maybe you could message me about moving and how it was and dealing a new culture.     The salt in the cheese accentuates the sweetness of the ensaimada and adds richness as well. Considering this was originally reserved for holidays, it makes sense both in that this was a rich (fatty) treat and Edam cheese was a luxury item. The idea isn’t totally foreign. There is a tradition of putting cheddar cheese on apple pie in the USA.

    I went there.. there were too many people, so we waited for morethan 3hrs to get a seat. All the while there were vacant seats inside.. they kept saying it was reserved but up until we finish eating, nobody was sitting there and still there were people in the queue. Now for the food, the bulalo was too salty you cant drink the soup even with rice it was too salty. There were a handful of meat and veg so each person could only get a cube of meat and a piece of string bean or 1 sliced leaf of cabbage. There were only 6 of us. They dont even serve the bulalo with bowls you have to ask for it and even then they would only bring a couple or so, so you need to ask again. I dont mind the heat coz its not in tagaytay proper but pls put up some fans we were all sweating while eating and they only had this ceiling fans for all. Overall been there, ate several dishes.. there was nothing special, subpar at most. For all the hassle and price i'd rather eat at bulalo capital (2nd branch). It's just basically hype not comming back.
